What a fun & yummy day! Mom came over and we made SCONES! We made 2 recipes and our favorite is listed below. I did not have enough lemon rind, so we added some orange rind.


Lemon Cream Scones

Ingredients

rind of one lemon

2 cups flour

1/4 cup sugar

2 teaspoons baking powder

1/3 cup butter

1/2 cup heavy cream

1 egg

1-1/2 teaspoons vanilla

Stir together flour, sugar, baking powder, and rind. Cut in butter until resembles coarse crumbs. In small bowl, mix cream, eggs, and vanilla. Add to flour mixture. Knead the dough; it will be sticky. Pat dough into 1/2-inch thickness. Cut with small round glass. Place on cookie sheet sprayed with a non-stick spray. Bake in a 400-degree Fahrenheit oven for 10 to 15 minutes.

  1. Mmmm, these scones sound delish! Can't wait for the weather to cool down so I can actually turn my oven on in the kitchen and try this recipe. I'll let you know how they turn out!
